Easy Breezy Baked Eggs for Weekend Breakfast

The weekdays pass away with all sorts of mundaneness. One of them being cooking the ordinary and quick-fix kind of food. But come Friday, I find myself enthusiastic. My Friday mornings are spent in planning what all will I cook through the weekend. My Friday afternoons are spent grocery shopping. And my Friday evenings are spent in cooking something special that shouts out the advent of weekend.

For such Friday dinners, I don’t cook Indian cuisine, I go with Italian cuisine. Or sometimes Mexican or Mediterranean, but mostly Italian.

That of course means that for the next day, i.e. Saturday, I am left with leftover sauce. Could be marinara or ragu or the tomato cream sauce. So the question is can I prepare a Saturday morning breakfast with these leftover sauces? Can I prepare a breakfast which looks special, and still could be fixed with ease?

Yes I can.


“Baked eggs” is one of such breakfast item that don’t require any special preparation and is ready on the dining table in less than half an hour. So here we go.

You Would Need

3 large fresh eggs

1/2 cup pasta sauce (Here , I have used my tomato cream sauce. Using marinara or any other tomato base sauce will give you the same results)

3 tbsp fresh cream (I didn’t use fresh cream because I used tomato cream sauce which already has a generous quantity of cream. However, if you are using marinara or such sauce, do put in the cream for sure. It definitely boosts up the taste of the dish)

Salt and pepper to taste

Olive oil

1/4 cup of grated Parmesan (or more if that is what you like)

Serving Size

1-2

How To Go About It

Preheat oven to 200 degrees Celsius.

Spoon sauce on the bottom of your baking dish. I would be better if the baking dish that you use for this recipe is shallow.

With the help of a spoon, make a well in the sauce for the eggs.

Crack open one egg and pour it over your well.

Similarly make the second well and crack open an egg on it.  Then make the third well and crack an egg on it.

The eggs will try sliding outside towards the wall of your dish. With a spoon, gently bring them back towards the center.

Add salt and pepper to taste. Keep in mind that your sauce would already have salt and pepper in it.

Drizzle cream and olive oil on top.

Sprinkle a good dose of Parmesan for the final layer.

Bake in the preheated oven for 10-15 minutes of till the yolks are just set.

The best way to enjoy baked eggs is of course with some nice warm toasted bread.
