McMuffins in the Time of Corona – Social Distancing in London

I love having McMuffin at McDonald’s for breakfast. Don’t worry; I’m very well aware of the fact that this breakfast is neither the most delicious nor the healthiest. However, I do unapologetically admit that there are times when I find myself insanely craving for nothing else but this.

A countless number of times, after having a good work out in the gym, me and my gym buddy have headed straight to the nearby McDonald’s to have these for breakfast.

Oh gosh, gym! I stopped going to the gym, scared like a wimp, as soon as the Covid-19 scare hit London. Being a mum, I didn’t want to take any risk whatsoever of bringing a virus in my house. I miss going to the gym, though not terribly. Home exercising with Nike Training Club has got my back, and my legs, bums and tums!

Coming back to McMuffins, I had bought a pack of English muffins last week. So today I decided to prepare copycat McDonald’s Egg and Cheese McMuffins for breakfast. The recipe was fairly simple, there was nothing much to cook except for the eggs. And because I cooked it with better ingredients, the taste surpassed McDonald’s. Here’s what all I did –

McDonald’s Egg and Cheese McMuffin Recipe

You Will Need


1 egg

1 English muffin

Mayonnaise or mayonnaise-based sauce

Cheese slice

Salt, pepper and ketchup – optional

Olive oil and a skillet or a non-stick pan to fry the egg

How to Go About It

Heat the skillet on medium heat. Add olive oil to the skillet and swirl it around to coat the pan.

Crack the egg open in a small bowl and gently tip the egg on the skillet. Cover the skillet with a lid and let the egg cook for 2-3 minutes. Uncover the skillet, flip the egg, cover again and let it cook on the other side for 2-3 minutes. Check the egg; if the yolk’s set, take it off the heat or else cook for a minute more.

When you fry an egg, its final shape is roughly an oval. If you want to make perfectly circular egg fry, you can use a stainless steel or silicon ring mould.

Slice muffins in half horizontally. Apply butter on the cut side and toast it on the same skillet on medium-high heat.

Now just assemble everything! Spread condiments on the cut side, layer with egg and cheese slice and top with the lid of the muffin.

Just because you can’t go out to a restaurant anymore doesn’t mean that you can’t enjoy food. Dig deeper in the World Wide Web and you’ll find the recipe of almost every dish ever. Find the ingredients or scrap for substitutes in your pantry and create your signature dish!

My All-Improved Cleanliness Obsession

I have always been obsessed with cleanliness; mess around the house seriously disturbs me. Even when I was a newly sleep-deprived perpetually-tired mother, ignoring the mess in the house made me restless. Scrubbing the bathtub real good, on the other hand, used to bring my sanity back.

So that’s one way that coronavirus scare has been positive for me – donning a disinfectant in my rubber-gloved hands I no longer look like a crazy lady; I instead look like a goddess of immaculateness fighting the evil viruses infesting doorknobs and keyboards.

As part of trying to make sure that we do not infect each other in the worst-case scenario, Mr B, Miss B and I have made some changes around the house. For example, we are no longer sharing a hand towel. So now I have three separate hand towels drying on my bathroom rack. Also, notice my spotless bathroom!

Peak or No Peak

My mind has become completely occupied with the coronavirus scare. If I were to take a Rorschach test today, you’ll find all of my responses related to either WHO or NHS.

So while walking on a pavement, I saw this.

And all I could think of was ‘the peak.’ Tell me I’m not going insane and you see a ‘peak’ too. I saw this and I hoped and I prayed that we successfully flatten the curve and never reach the peak.
